Put the onion rings, sliced in half, and the butter into a big heavy-bottomed saucepan to melt. Onions should be stir-fried until they become translucent.

To prevent the onions from burning, reduce the heat to low and cook them for a while longer, stirring occasionally. Instead of overcooking the onions, you want to get a caramelized color and a delicate, nearly weightless texture. In a dry skillet, lightly brown the flour. As soon as the flour starts to get a roasted nut color and scent, toss it into the onion pan and stir it through.

To finish, add the sugar-wine mixture to the pot. After a minute of boiling, add the onions and let them simmer in the wine. Finally, thin them out with broth or water. Once boiling, reduce heat to low and simmer for 15–20 minutes. Add the rest of the water while stirring. After de-scaling, bring to a boil and then reduce heat to low and simmer for 15 minutes.

Put the sliced baguette on a baking tray and top with shredded cheese. For a little browning and melting, pop it into the oven for three or four minutes. Arrange the soup on deep plates and top with croutons that are floating and slowly expanding.
