Ingredients
  • Olive oil: 2 tablespoons
  • Onions: 1
  • Garlic: 3 cloves
  • Tomato paste: 1 tablespoon
  • Basil: 1 bunch
  • Tomatoes in own juice: 400 grams
  • Milk: 400 ml
  • Soda: pinch
  • Sugar: 1 teaspoon
  • Salt: to taste
  • Ground black pepper: to taste
Instructions
1. Heat the olive oil in a saucepan. Saute the finely chopped onion and garlic over medium heat until soft, about five minutes. Add the tomato paste to the onions, stir-fry for 30 seconds, then add the tomatoes, basil, salt and pepper.
2. Bring the mixture to a boil, turn the heat down to low and simmer for 15 minutes.
3. Puree the soup in a blender and pour back into the pot.
4. In a small bowl, mix a tablespoon of milk with a pinch of baking soda to avoid lumps. Add the mixture to the soup in the pot, stir, then pour in the rest of the milk. Stir the soup once more and bring to a boil. Reduce the heat and simmer for 5 minutes.
5. Add sugar, salt and pepper. Serve hot.
