Crispy Rice Soup Recipe

Serves 4.

Ingredients for making Crispy Rice Soup Recipe

¾ cup cauliflower, finely chopped
¼ cup carrots, sliced
1 tablespoon celery, chopped
2 tablespoons spring onion whites, chopped
¼ teaspoon Ajinomoto powder (optional)
¼ cup tomatoes, cut into small pieces
2 tablespoons lettuce leaves, chopped
4 cups clear vegetable stock
2 tablespoons oil
salt to taste

For the garnish

4 to 5 tablespoons crispy rice

To serve

chillies in vinegar
chilli sauce

Method for preparing Crispy Rice Soup Recipe

1. Heat the oil in a wok over a high flame and add the cauliflower, carrots, celery, spring onion whites and Ajinomoto and sauté for 3 to 4 minutes.

2. Heat the stock, add the sautéed vegetables, tomato pieces, lettuce and salt and allow it to come to a boil.

3. Pour into a large serving bowl.

4. Just before serving, sprinkle the crispy rice on the soup and serve immediately with chillies in vinegar and chilli sauce.
