Carrot and Pineapple Salad Recipe

A crunchy warm Carrot and Pineapple Salad.

Serves 4.

Ingredients for making Carrot and Pineapple Salad Recipe

2 onions, cut into thin slices
1/2 teaspoon ginger, chopped
2 garlic cloves, crushed
2 cups carrots, peeled and thinly sliced
1 cup pineapple cubes
1/4 cup fresh pineapple juice
2 tablespoons oil

For the garnish Carrot and Pineapple Salad

1/4 teaspoon freshly ground black pepper
1 tablespoon chopped parsley

Method for preparing Carrot and Pineapple Salad:

1. Heat the oil in a pan, add the onion, ginger and garlic and stir for few minutes.

2. Add the carrots and stir fry for some time.

3. Add the pineapple cubes and juice and stir till the juice dries.

4. Garnish with the freshly ground black pepper and chopped parsley.

5. Serve warm.
