Sweet Corn And Capsicum Soup Recipe

A typical Mexican smoky flavoured capsicum and sweet corn soup. Remember sweet corn is yellow in colour and can almost be eaten raw.

Cooking Time : 10 min.

Serves 6.

Ingredients for making Sweet Corn And Capsicum Soup

1/2 teacup milk
2 teacups cooked sweet corn kernels
1/2 onion, chopped
1 capsicum
1 tablespoon cornflour
1 tablespoon butter
salt to taste

Method for preparing Sweet Corn And Capsicum Soup


1. Pierce the capsicum with a fork and hold over the flame until the skin blackens. Remove from the heat, rub off the burnt skin and chop.

2. Heat the butter and fry the onion for 1/2 minute.

3. Add the capsicum and fry again for a while.

4. Blend the milk, corn and 3 cups of water in a blender. Add to the onion-capsicum mixture.

5. Mix the cornflour with 1 cup of water and add to the soup.

6. Add salt and boil for 4 to 5 minutes.

7. Serve hot.
